Course Format

Our Food Science curriculum is designed to blend engaging afterschool learning with the proven 5E instructional model—Engage, Explore, Explain, Elaborate, and Evaluate.

Each phase encourages students to connect food, nutrition, global cuisines, and entrepreneurship in meaningful ways while building curiosity, creativity, and real-world problem-solving skills.

We begin with the Engage Phase, sparking interest through prompts like “What’s really in your favorite snack?” or “How does food fuel both body and business?” that invite students into deeper inquiry.

In the Explore Phase, students investigate through hands-on activities such as breaking down macronutrients, analyzing vitamins, tracing food through digestion, and decoding nutrition labels.

The Explain Phase introduces key concepts in chemistry, nutrition, and food systems, helping students see how science and culture intersect in every meal.

The Elaborate Phase brings learning to life with projects like building a food pharmacy wall, creating macro meal maps, designing global food carts, and pitching restaurant concepts with menus and branding.

The journey concludes in the Evaluate Phase, where students present their projects, reflect on their discoveries, and connect their work to wellness, innovation, and sustainability.

This structured yet flexible approach ensures every student not only learns advanced food science and nutrition but also gains collaboration, design, and entrepreneurial skills that prepare them for success in the real world.
